today I made

Damn-good-but-so-not-on-my-health-kick-so-I-better-deliver-them-fast-carrot-cake-cupcakes.



As you know I am on a health kick, and you may also know that, despite the carrots, carrot cake is so not healthy.

But... baking can say love.

I wanted to show some love.

So I baked. 

Cupcakes.

Carrot Cake Cupcakes.

With Cream Cheese Frosting.

I should so not be eating cupcakes.

But look at them...



I made two dozen to drop off for our friends birthday.

Then I made a few mini cupcakes with the extra batter.

I decided that I needed to try one. I had to make sure they were good right? I didn't want to drop of two dozen bad cupcakes.

The mini cupcake probably packed 200 calories but it was worth it.

I promptly packed them up and we were off to deliver them.

I have a few hundred calories a day that I am letting myself have for treats or cocktails, I used them all up with one little cupcake, it was yummy.

No running, just baking.

This is not good.

But I showed some love.

  4. OMG cupcakes are my WEAKNESS! They look amazing...how did you stop at one? I would have needed to double the batch and eaten half myself, haha!

  5. Oh Carrot Cake in cupcake form.....this would be a disaster if I was left alone with them. They looked delicious.....yyuummmmm.
    I love carrot cake....Im not a big cake eater but carrot cake I will always make an exeption for!!!

  10. I used the recipe from Smitten Kitchen for the cupcakes, it was good and light. Next time I will add a touch more nutmeg and cinnamon and a little less ginger.

    I made the frosting by beating the following together:

    2 packs cream cheese
    2 Sticks butter
    2 cups powdered sugar
    2 TSP vanilla, maybe more I did not measure, just taste and see if it needs more.

  12. How did you make the frosting look so pretty? I have always wanted to make beautiful cupcakes. I think the kids at Mustard Seed must secretly wish I'd just buy them treats for their holiday parties :) And if they saw my caramel apples this year they would be most grateful I bailed on the homemade versions and bought the caramel apples & just made brownies.

  14. Meg, it is so easy. You just put the frosting into a large zip lock bag and cut the tip of a corner off and then pipe it in a circle.

    I have been on the cupcake kick lately...but I've given them away to the neighbors. Cream Cheese frosting is my weakness...spoonful after spoonful. XO
